Busy Weekend and Strawberry Parfaits

May 19th is the day for events. Our local pool is having a party, my town’s mother’s group is having an organizational meeting, we’re hosting a birthday/Mother’s day celebration for my mother, my colleague is having a birthday party at his house and my friend is having a bridal shower thrown for her. Phew! Good things come in waves. Unfortunately, it’s not physically possible for me to be everywhere, so I narrowed it down to bridal shower, colleague’s birthday party and having my family over to celebrate Mother’s Day/birthday.

For dinner, we’re broiling salmon. I’m making risotto with asparagus, summer squash, and shallots. The secret to good risotto is adding one cup of chicken or veggie broth to the risotto, letting it soak in and then adding another cup and so on until you’ve added 4 cups. It tastes 100% better cold the next day than it does hot right away, so I’ll make it the night before.

For dessert, I wanted to do something sugarfree that would still appeal to people who eat sugar. I used DH as a taste tester. I made ‘parfaits’ and made the practice version last night. DH gave it a high mark, and I have to admit to being surprised that a nonsugar dessert passed muster. My backup plan was an ice cream cake, but it’s hard to go wrong with ricotta and strawberries.
